I’ll try my very best to clarify what it means… :;):

Generally you these days only tick ‘Joliet’
It is defined as an extension to the ISO 9660
Note: Joliet has been specified and endorsed by Microsoft and has been supported by all versions of its Windows operating system since Windows 95.

You are recommended to tick ‘Joliet’ when creating ISO in EasyBoot :O

"DOS(8.3)" is a filename convention used by old versions of DOS and when ticked you maintain backward-compatibility to this ’old’ DOS file name convention.
I have never used (ticked) "DOS(8.3)" in EasyBoot as it might create other problems.

"Allow lower case" is something we desperately trying to not use at all, as it creates other problems. "Allow lower case" force ISO to accept ‘lower case’ to letters.
It is not commonly used as it creates other problems :(

"Optimize" is used when you integrate several folders (folders with different names) and that holds exactly the same files.
By ticking "Optimize", you only use one file and by this save space
"Optimize" (reduce) the total size of used space you may say.
Typically case is when creating All-In-One CD with setup files from NT5-systems (WinXP, Win2000, Server-2003 and similar NT5-systems)
"Optimize" is not commonly used to other files these days.
Avoid ticking "Optimize" if possible.
