I'm not entirely sure what I could possibly be doing wrong, but whenever I try to extract the boot file from a bootable cd (have tried a couple different ones) the resulting .bif file ends up being 2gigs big.  I'm not entirely sure how the program is even finding 2gigs worth of info off of a single cd.  

any help or insight would be appreciated

Thanks for your bug report. Please do it this way:
1) Start UltraISO
2) Choose 'Tools'->'Make CD/DVD image' to get an ISO image from the disc
3) Send the first 1MB of the ISO image (A small utility at http://dw.ezbsys.net/filecut.exe may be helpful) to service@ezbsystems.com for detailed checking.
