Yes, you can backup and re-create game DVDs this way:
Backup:
1) Start UltraISO
2) Put a game DVD to your DVD drive
3) Press F8 to create an ISO file

Record:
1) Start UltraISO
2) Put a blank recordable DVD to your DVD writer
3) Press F7 to burn a copy

PS: For copy-protected game DVD's, it is recommanded to install AnyDVD from slysoft first.

No. You can burn the .NRG's and .MDS/.MDF's by Nero or Alcohol 120% itself.

Not sure. It is recommanded to burn to a DVD+RW/-RW disc first, and test it on your PS machine.

You can try the original DVD's.
