My boss has requested that I make a very...versatlie bootable device. He has also requested that it be fairly secure. Is there any way to make a password login required to use the boot menu in EZB?

Yes there is,
It is on the File tab next to the Wait Time box. Make sure you click on the "P" button next to it to set the password.
Another suggestion to you would be to add an autorun.inf file to the root of your disk. This way if they pop in the disk while in windows you can make it open an external website asking to return the disk if found. the content of the file should be similar to the following:
[autorun] ShellExecute=http://intwebserver/returncd Icon=ghost\ghost.ico
